INGREDIENTS
Cassava flour 3 cups
Salt 1-2 tsp
Water 1 1/4 - 2 1/4 cups
METHOD
Basic Steps: Mix → Knead → Rest → Portion → Roll out → Pan bake
- Mix salt into the cassava flour. Stir in enough water to make a stiff dough. Cover and set aside to rest for at least 30 minutes.
- Cut dough into 6 equal portions. Dust a countertop with some cassava flour, and roll each portion out into 6" rounds.
- Heat a greased skillet over medium flame. Cook each round for 3-5 minutes on each side till browned. Serve warm.
NOTES
Bammie is descended from the bread eaten by Jamaica's original inhabitants, the Arawaks. It is rarely made from scratch these days and is usually bought from a local vendor.
