Ingredients
1lb sweet cassava {1 1/2 cup}
4 eggs
1 1/2 cup butter milk
1 cup grated cheese
2 1/3 cups cornmeal
1 cup all purpose flour
1 tbsp baking powder
1 1/2 tsp salt
1/2 tsp baking soda
1/4 tsp ginger powder
1/2 cup margarine
Method
- Peel sweet cassava and bake until tender
- Cut and cool mashed cassavas
- Place mashed cassava in bowl and whisk in eggs, cheese and butter milk.
- Blend cornmeal and remaining ingredients in processor until mixture resembles coarse meal.
- Add egg mixture, stir just until blend.
- Pour into greased 9x9x2 inch baking pan.
- Bake until deep gold on top and tester comes out clean, about 45 minutes.
- Sprinkle grated cheese on top.
- Serve warm.
